This dark chocolate bar is made with beans from Rayen in Soconusco, Mexico and is sprinkled with Pinole, an ancient mixture of heritage corn and panela. Flavours reminiscent of coffee dominate while the soft fruit notes of cacao beans shine through. The Pinole is sourced from Occentlalli in Mexico who are doing great work keeping many many different types of corn alive and used.
