Camilo is the president of the ASOPEP cooperative in Planadas, the birthplace of the FARC resistance. This lot of 100% Tabi variety gets a fashionable process - anaerobic fermentation to some, "cherry ferment" to folks in Tolima. Basically, leave the cherry on, and keep it tied up in the nylon bags they are weighed and stored in for about 48hrs then continue with the depulping and washing process. Ta-da. Fruit forward with sparkling acidity.
