Jose is part of a tight group of friends and neighbors who collectively call themselves Los Guácharos. All members are transitioning to fully organic farming, greatly bolstered by having a stable buyer and therefore, the security and capacity to experiment with post harvest processing. Lengthening fermentation times at lower temps, variety separations and planting new, unique varieties (geisha, pink bourbon).

This year, aided by sons Adrian & Nestor, the coffee day lots that made up this micro lot were subject to experimental controlled fermentation trials with lactobacillus and a cold water cherry ferment. Clean, subtle fruit, and sweet cups. Lychee, melon and panela.
