Javier's farm is nestled into a steep cliff ledge in the Yacuanquer municipality of Nariño at elevations that bring their own disctinct challenges. With clouds settling at the top of the farm, cherry maturation is slowed and drying conditions are precarious. He uses a mix of raised, covered beds and mechanical driers because the cloud cover disallows full drying.
